Is there any way to view the effect of your hits on enemy ships at the end of battle, the same way as you can see the details of each hit they score on your ship in the ship's log? Like, where it hit, whether it penetrated etc.?

You could check the logs after the battle, each ship should have a record of the shells/torps it took during the fight. You can find out where a shell hits or if it did something like knock out a turret.

For friendly ships, yes, but can you do it for enemy ships? Yes, after a battle is over go to the report and then click on the ship you want to know about. The ship's detail screen should pop up. Then click on log. Another screen should pop up with the shell/torp hits that occurred over the battle.

For friendly ships, yes, but can you do it for enemy ships? If you haven't yet closed out of the battle results screen, yes. Click on the Details button, then double-click on any line in the list of ships to bring up its engagement summary window and click the 'Show Logs' button in that window.
If you have closed out of the battle results screen or have exited the battle but have not yet entered a new battle scenario, you can also open Autosave.SAC in the savegame file and find the logs for each ship which participated in the engagement there, though only up to the point of the most recent autosave. If you manually saved the game prior to exiting the battle scenario, you can also look at the other *.SAC file in the savegame folder and the logs up to the time of the savestate should be there, as well.
