Hello.. Is there anywhere where I can find the performance of the guns against armour at different ranges? And vice-versa, is there a way to see the performance of the armour that your vessel carries?

Hello and welcome! Yes, on the design screen look for a "Gun data" button right around the main gun section on the right side if I recall correctly. That will show the rough penetration data for the currently selected main armament. Currently that's it to my knowledge, however in RtW2 an immunity zone calculator will be present, so you'll be able to do a basic check from the armor-side as well.

And vice-versa, is there a way to see the performance of the armour that your vessel carries? As mentioned akosjaccik , you can see it in design window after using button "Gun data". If you need penetration data for different caliber, just change caliber of main guns. If you are in battle you can right click on any ship, it will open ship window and there are "Data" buttons so you can see penetration of your main, secondary and tertiary guns.
All penetration tables are with your current technology and quality guns selected. Other nations could have different penetration tables relating to their guns and their technology progress.
There are alway 3 numbers - distance, belt penetration and deck penetration - it is done for flat deck on top of belt armour. In case you have sloped deck, increased protection provided by sloped deck is not calculated. Similar when you choose protected cruiser armour scheme - belt protection is sloped deck (in game used belt armour), so numbers are not relevant.

In addition to the gun data available in the design menu - which lets you see the performance of any gun developed by any power that'll allow you order ships from their yards using your current AP shells - you can also open the Research menu, go to the Naval Guns tab, and double-click on a gun that you've developed to see its performance table. There's also this table of gun penetration values, which has more of the potential technological states represented.
Note that both the table that I linked and the document that JagdFlanker linked are giving gun performance for the in-game year assuming the nominal rate of technological advancement indicated by the year associated with each technology in the game. Actual in-game gun performance can differ from that indicated by the table according to what technologies you - and your opponents - have actually developed.
Also, it should be mentioned that just because your guns have a given performance does not mean that your enemies' guns will have the same performance. If you're behind technologically, chances are that your opponents' guns will be at least slightly better than your own.
