Are there any Age of Sail mods out there. with years that are within the 1571–1862 range?

None that I know and I highly doubt that there are. You might be able to mod early steam ironclads and have it work well enough, but I doubt Trafalgar would work well in the system, at least while retaining any historical accuracy.

Was the game engine able to handle speed and maneuvers based on wind direction/speed? How well did the player-directed ships handle?

I'd buy an Age of Sail game. Without micromanagement - build your fleet, let it (not) rot, send squadrons, fight, repeat. It requieres a different engine, would be a pain to learn (*), but I'd buy it.
(*) - learning to control a sailing ship is difficult by itself, controlling squadrons would be insane for us, landlubbers.
