First question: Should I be worried that my catapults are described as "swivel mounts"? I'd assumed these would be built into the deck.
Second question: Does the number of "tubes" make any difference, or is is just a vestigial part of torpedo tube logic being used?

1st question - you must be talking about ship mounted floatplane catapults. carrier deck catapults are a separate tech that comes later
2nd - amount of tubes lets you fit more torps in a single location, otherwise there doesn't seem to be a weight savings or any other benefit

And I don't mean for torpedoes. I get an option asking how many "tubes" I want on my catapult - which I think is more likely to be a bug, or vestigial as I said

rhetoric , the option to set the number of Guns/turrets is simply because the game has reused the dialog for adding guns. You can't actually add 4 catapults in a single location. Changing that value will have no effect on the number of catapults installed. If you want more than one catapult (which currently does not seem to have any noticeable effect) you will need to manually "Add" each catapult using the "Catapult" widget. Each catapult needs to be manually added as a design element. They are not added automatically.

Just a note that having two catapult ups the ship's spot capacity to two, allowing you to launch quicker and two planes as a group. Anymore does not do anything at the moment. I do hope that in the future we can fit more to a ship so that we can make some aviation cruiser/battleships like Mogami/Ise later on.Also preferably a way to increase the spot value of these ships slightly so we can launch a slightly bigger strike group. (No need to be too excessive, but something like 4-6 planes as opposed to two will be much better.

More cats doesn't necessarily means you can launch a lot of planes in a short time. Not at least in something that's not a carrier (and for CVs the limit is the deck space those cats take, until the supercarriers of the mid 50s I don't think any CV ever carried more than 2 deck catapults). In ships as AVs or ships with extensive floatplane facilities you still have to move the floatplanes around, which isn't exactly easy given that those planes won't be moving on their own; the crew will be usually using cranes and/or trolleys to move them around, taking them out of the hangar, placing them on the catapult, etc. More catapults means you can launch more ready planes in one go, but you still have to ready those planes, move them around and put them on the cats to begin with. A catapult is no good if you don't have a ready plane on top of it to launch .

To answer the specific question on how you add deck catapults to your carrier design, once you research the technology, you add them under the catapults tab. The maximum is two. See attached screen shot. They are not the "swivel" type used on non-carrier warships.

You can add at least 4 (haven't tried more) once you research angled flight decks. Also something no one has mentioned here: According to the guide, catapults allows CVs to launch CAP fighters without turning into the wind.

Where does the angled deck design option appear? I have researched it, but cannot locate anywhere on the ship design page to add an angled deck. It is automatic or a player decisions to add?

It's automatic on new classes after researching, as far as I can tell. Doesn't really change the look of auto generated ships or anything, and no toggle checkbox.
