I notice the New Mexico class has an 8" deck. I'm assuming that is a typo? Even 20 years later, I think only the Yamato's even came close to that.

Breyer (Battleships and Battle Cruisers 1905-1970) show two armoured decks (AD) for the Idaho's:
As built the upper AD = 89 mm (~3.5") and the lower inclined 38 mm - 51 mm (~1.5"-2") for a total of 5"-5.5"
After the extensive refit early thirties he shows the upper AD as 152 mm (6") and the lower AD 51 mm (~2") for a total of ~8".
Admittedly the figure for the upper AD is shown as speculative, post-conversion and a number of Internet references do differ on this class. This is a common occurrence when researching the subject matter and if you do not agree it's easy enough to fix. However the numbers were not generated out of nothing and DesignShip2 allows you to plug in whatever values work for you or that correspond to sources that you trust.
For ships with multiple AD, the values could add up considerably but SAI only allows for the representation of a single horizontal armour configuration. The jury is probably still out as to whether a single thick deck provided more protection than multiple thinner decks totalling similar thickness.

The problem with the early 30's refit is that the game isn't set in the 30's or 40's. The 5.5" total as built was, I believe only in the area of the tiller flat (sorry, not sure what the USN calls it), so, while the 5.5" would, in my opinion still be too high for the ship as built (which is essentially what the game represents), it would be more accurate than the 8" as currently set. I'm not sure how reliable this page is, but it gives a breakdown of the deck armour. As these figures show, the deck is nowhere near 8", but then again it also doesn't give a date for this armour. However, the New Mexico design was not included in the original Steam and Iron (I checked a v1.0 installation) and was created by a Member of the Community then uploaded to the old forum. The only place the design is used in the stock game is the Pacific Battle Generator and when I wrote that I will admit that I never examined the design closely as the class is, as you point out, properly outside of the SAI core era. So, if you don't like the design as is, please edit it to be whatever you like. I did. Thanks
