I just played through the demo. I had 2 fighter types:
The Aichi Goshikisei B with 147 speed, 116 range, 2 firepower. The Mitsubishi Raiden with 129 speed, 87 range, 4 firepower.
I would like to carry both types on the same ship at the same time. With one wing of Goshikisei B for escort, and one wing of Raiden for CAP. Is this possible? How can I define what aircraft a squadron is fitted with?

It is not possible to do that in RtW2. Air wings will automatically populate with the latest design of whatever aircraft type they're flagged as.

I would like to see land based fighters and attack aircraft with higher performance, and the ability to have older aircraft on colonial stations.

Or even just being able to have different aircraft with different priorities, so we can follow different strategies with our land-based air. I suppose the fact that airbases are out of player control makes that a bit less important.

I would like to see land based fighters and attack aircraft with higher performance, and the ability to have older aircraft on colonial stations. That was discussed internally some time earlier during development, we might revisit it once things get better stabilized with the game.

Out of curiosity would it be possible to add new types of aircraft via modding eg. heavy fighter to represent twin-engine (or just ground based in general) fighters?

I would also like the ability to manually designate aircraft types for squadrons. Perhaps the game would automatically assign the latest model of the appropriate type unless the player specifies that a different model be used. While it could be useful to have two types of fighters, one optimized for performance that would be used for CAP, and one optimized for range as an escort, I don't think that is particularly realistic. Where I see this being useful is for scouting. You could have a modern TB design equipping you fleet carriers to use in strikes, and equip your light carriers with an older design that is worse overall, but does have better range (and probably cheaper upkeep). Sure, using the new design for scouting as well would work well enough, but it would be overkill

Sure, using the new design for scouting as well would work well enough, but it would be overkill Royal Navy did it, have different fighters. Marlets and Fulmars, later Seafires, Corsairs etc. However it is more difficult in maintanence and it should increase maintenance costs.
