What is the easiest way to add to the total economy of the game? I want to increase the economy so that most countries can build close to their historical number of ships, if possible. Currently this is not possible even on Very Large... I would like one more option of extremely large or something...

Easiest way in my opinion to do it would be to change 'FleetSize=#' in the savegame file on Turn 1 (this is the RTWGame#.bcs in each savegame folder). This does you mean you will only get the 'very large' budget for the legacy fleet, but will have whatever you want going forwards from there. It also means the dockyard and research costs scale proportionately, which isn't the case if you just up the BaseResources/HBR numbers in the nation files.
FleetSize=7 is Very Large, I use FleetSize=9 on those games I want to go beyond that. I have no idea what happens if you go crazy with it.

I put in a suggestion that we could get a 'custom' option for the Fleetsize selection at the start that would let us just enter a number to use here, alternatively if the default modifiers for the 4 standard sizes were externalized it would make them easy to mod, and would let us start with that multiplier instead of having to adjust it after starting the game.

Thank you for the reply, elouda. I edited my game. Cool stuff to know, I appreciate it. I suppose we could enter even numbers for fleet size as well? So an 8 would be a little more? Most importantly, I have a question of game balance. Playing as Italy with a fleet size of 9, would that be too imbalanced considering other nations have so much in terms of resources? It'd be realistic... but damn... I think any war with Britain or the U.S. as Italy and they'd be able to replace any losses like they didn't happen, but I'd be hurting. Where's the sweet spot for base resources and fleet size do you thinjk in your experience? I do like the idea of a larger fleet, as it is, there's hardly enough to go around protecting your colonies.
