Anyone else seem to have that a ship will be following a course order and then the next minute going a completely different direction. Today I had one with my carrier fleet and almost had a HMS Glorious incident when the enemy was in sight the whole time until they turned away not my carriers. I guess my crews wanted to make history?

Probably flight-operations.
In order to launch/recover planes, a CV has to turn into the wind. And apparently, CVs do this on their own whenever they feel like it to replenish CAP, launch search-planes and so on.
I think a check-mark or something similar to keep a CV from doing this and sailing straight into the guns of the enemy's battle-line has been requested once or twice, though I don't know if anything like this is in the making.

A check mark like that would be nice. Especially when a battle line sights you and the carriers decide to put on a show by going in circles. I would probably rather loose some aircraft than a whole carrier.

This was discussed however it was determined that it is an imperfect solution. I actually was firmly dead-set on the need for this feature but discussion changed my mind. The issue really isn't that the carriers continue to make flight ops when the player doesn't wish it to, it is that the AI for carrier ops needs to be adjusted/improved. The player could have a check-box to halt flight ops, but the computer can't. Not that we're worried about the player getting an advantage over the computer, but there should be a better solution. This is what is being discussed, and I believe being worked on. (all hail House Davion.)
