When i try to convert an AMC into a CV it gives me an error about "design bureau wont allow such a big ship without at least 8x8in guns". Now, 8in guns are not allowed on unarmored ships. And armor is not allowed on AMCs. So even after researching conversion to full sized CVs it is still imposible to do such conversions.

You have to make it a CVL. Honestly that’s the best anyways most fully converted CV’s don’t carry much more planes then. CVL anyways

Right, i have no problem converting AMC into CVL since they only require 6in guns at most. But why including the "Conversion to full sized CV" technology then??? It`s not only misleading but frustraiting too. Now i am left with my huge good-for-nothing AMC.

I don't believe the conversion to full-sized CV is meant to apply to AMCs, but larger, older warships (or simply unneeded due to changing circumstances).

Have you tried copying your game to run a test of making the AMC>CVL with empty space or unneeded guns then converting CVL>CV removing the extras.
Its a frequent practice on that first 8inch CV to soon strip out some of the games to game a small number of extra planes.

This is meant to represent that early carriers were almost entirely converted from Battleships and Battlecruisers (Or Large Light cruisers , whatever you call HMS Furious)

The early 'consensus' on converting warships to carriers was to include at least a modest anti-surface armament. Later on it was discovered that this armament was (almost entirely) useless, but the rule is there to mimic this (almost universal) early design trend...and to avoid premature 20/20 hindsight by players :-)

Personally for RTW2 (yes 2) I liked to keep a few stern guns as CVs tended to get found. Not having it happen so much in RTW3 though we can now use stern casemates for 6" to 8" chasers to fend off DD or CL.
